Easy Vanilla Flan

- Preheat oven to 325. Put cajeta in microwave safe measuring cup and microwave for ~30 seconds
or until soft and pourable. Using a 6 muffin silicon muffin mold pour cajeta into each cup coating the bottom.
Tilt mold so the cajeta completely covers the bottom.
- In a small saucepan set over low to medium heat, warm milk until it is steaming. While heating milk, in a large
bowl whisk together eggs and egg yolks until uniform in color. Add condensed milk and vanilla and whisk until
smooth. Slowly add hot milk, whisking constantly. Gently pour a portion of the custard mix into each of
the cajeta lined muffin molds.
- Heat approximately 2 quarts of water until steaming. Place muffin molds into a larger roasting pan and place in
pre-heated oven. Add water to roasting pan to a depth of about 1 inch. Close oven and bake until flans are just
barely set in the middle, about 35 to 40 minutes. Remove from oven and allow to cool in the hotwater bath, then
refridgerate until thoughly chilled, about 2 hours.
- Remove from molds and serve. You can add whipped cream and/or berries, or just serve plain.
- 1/2 cup store-bought cajeta
- 1 1/2 cups milk
- 3 eggs
- 4 egg yolks
- 1 14oz can sweetened condensed milk
- 2 t vanilla extract
