Stuffed Shells w/Italian Sausage

Directions
Ingredients
- Preheat oveb to 350° F
- Add 2 T of olive oil, onion, and itialian sausage into large skillet and [lace over medium heat.
- Once sausage is cooked, transfer to large bowl and set aside.
- Bring large pot of water to a rolling boil and add salt and 14 oz of jumbo shells and cook according to package
- Drain shells and set aside
- Add ricotta, egg, parmesan, basil and garlic to itialian sauge and onions and combine throughly
- Add a layer of marinara to bottom of 9x13 baking dish
- Fill shells about halway with sausage mixture and arrange them in single layer in the baking dish
- Spoon additional marinare over shells and cover entire dish with mozzarella
- Cover dish with foil and place in oven. Bake for 30 minutes covered, then remove foil and bake for an additional 15 minutes until cheese is melted and browned
- Garnish with finely chopped parsley (optional)
- 2 T EVOO
- 1 medium yellow onion chopped
- 16 oz Italian Sausage
- 14 oz jumbo shells
- 15 oz ricotta
- 1 large egg
- 2/3 c parmesan,finely shredded
- 1/3c fresh basil or 1 1/2 t dried
- 2 cloves garlic, minced
- salt and pepper
- 24 oz marinara
- 12 oz mozzarella, shredded
- fresh parsley, chopped(garnish)
